Pumpkin Curry Pasta Sauce

Image
First of all, I want to give a big shout out to one of my favorite fans. This special lady read about when I broke my hand mixer trying to make all that frosting for those wedding cakes. Right away she sent me an email and said she wanted to get me a new one. It came the day before Christmas and I have made good use of it since. Thank you so very much! Yesterday I attended orientation for college, and I was able to register for all my classes. I will be taking 13 credit hours with four classes and one lab. Tomorrow will be my first official day and I am excited!  With so many changes all at once I feel like a new chapter is opening in my life. I want to be ready for anything that comes and recently I have not been feeling the best. It is not anything terrible, I just know that I am not feeling as good as I can. I think it is because of my eating habits. For someone else this would be great. I mean much of what I have been eating has been home baked with fresh ground whole...

Curry Soup, Oreos, and Custard

Image
I cooked up a storm on Monday night. I tried three new recipes, and they all turned out great. It was a miracle, and something that doesn't happen often. It seems that the more I cook the more disasters I have. Lentil Sloppy Joes, Vegan Lemon Poppy Seed Bread, Black Bean Brownies to name a few. Yet, each one teaches me something new that I didn't know before. I can't complain about the failures, because they are my teacher. But when I am successful I am not ashamed to celebrate my victory :)!  For dinner I made a Thai Red Curry Pumpkin Soup that I found over at The Whole Kitchen blog . I found her blog recently, and I adopted her this month for Adopt A Gluten Free Blogger. I couldn't find just one recipe, because they all looked so delicious. So you will be seeing more recipes from her blog that I will be trying in the next week. I was definitely impressed with this soup. I followed it exactly except I didn't have a bell pepper, I used chicken instead of turkey, a...

Spicy Tomatillo Salsa

Image
When Nicole and I made our Mexican dinner on Wednesday we had some tomatillos that we didn't use. Nicole graciously sent them home with me. What else was I to do? When life hands you tomatillos, make salsa.  It turned out brilliantly and I have been putting it on everything. I took some jalapenos, tomatillos, and garlic and roasted them in a nonstick pan. Then I threw all that into the blender with cilantro, lime juice, and some salt. It is SPICY, but oh so good! You know how much I already love sauces, but this one is special. It has a fantastic blend of heat, tang, and vibrance. I put it into a recycled Kombucha bottle, and I have already used up half of it. Spicy Tomatillo Salsa 5 Tomatillos 3 Cloves Garlic 3 Jalapenos (it is really spicy, so use less for a more mild salsa) 1 Lime, juiced 1/2 bunch of cilantro pinch of salt Take tomatillos, garlic, and jalapenos and roast in a nonstick pan until dark brown on all sides. Place in blender with the cilantro, lime jui...

Adopt a Gluten Free Blogger: Sea at the Book of Yum

Image
I found out about this "Adopt a Gluten-Free Blogger" event about 2 months ago and knew I wanted to join. Sea at the Book of Yum has been hosting it. For anyone that enjoys reading gluten-free food blogs you can 'adopt' one of them and pick a recipe or two to try out. Then you write about it and talk about the person or blog that you chose. You can click here to see all the adoptions for this month. At the end of the month Sea will compile all of those posts and recipes where you can see what experiments and adoptions others have made. I thought it was a fabulous way of creating community in the blogosphere and I am so excited to be able to join this month. I was selfish and chose Sea, the amazingly talented woman hosting this event. I haven't been reading her blog for very long, but I greatly enjoy the culture, variety, and creativity she puts into the food she makes. I am a big fan of trying crazy new foods and foods from other cuisines and cultures. She tak...

Coconuts and Collards oh my

Image
I am excited to share with you some of the great food I ate yesterday. I told you on Monday that I am going sugarless for ten days, and my goal is to try to eat more vegetables and balance out my cravings. It is going well and I believe yesterday was a great success. It included a lot of coconut and collard greens, and that makes me happy :). For breakfast I ate a banana sliced in half with natural peanut butter and unsweetened coconut.     For lunch I ate summer rolls. They originated in Vietnam and the name literally means "mixed salad rolled". You can take whatever filling you want, with options including meat, sprouts, vegetables, rice noodles, and herbs. Then you wrap it up in a thin wrapper made out of rice, and is generally served with a dipping sauce. It is naturally gluten free, fresh tasting, and a meal I enjoy frequently. Yesterday I put avacado, cucumber, mushroom, carrot, and cilantro leaves in my summer rolls. I used a recipe for Spicy Mustard Green and ...
