Detox Day 6 and 7

Image
Hey everyone! I only thought I was going to have lots of time this weekend to cook. It ended up being really busy, and I didn't even take any pictures yesterday. Sorry!  I will give you the quick run-down for yesterday's eats. We ate our usual orange, oatmeal and soup for breakfast. We ate leftovers for lunch and went over to a friends house for dinner. They served baked chicken, sweet potato, asparagus and kale. It was absolutely delicious and we had a lovely time! Today, I did a much better job of taking pictures.  We ate grapefruit instead of oranges for breakfast this morning. My Mom ate her grapefruit like this and taught me how to peel them. Now I love eating it this way too! With a small paring knife you cut the rind off of the grapefruit. Then you cut into each segment with the knife and scrape out all the flesh.  There is very little waste with this method as long as you cut as close as you can to the peel.  It was really yummy! ...

Seaweed as a Condiment

Image
Happy Labor Day everyone! I have had a great weekend so far and I am excited to spend some time with hubby today and get caught up on some homework. Lazy days at home at the best! I got some laver seaweed the other week, which is an edible seaweed that has high levels of iodine and iron. It is paper thin, and has a little crunch when you bite into it, but then easily dissolves in your mouth. It has a wonderful savory, sea-salty taste that makes it a great condiment. If you have tried sushi, which is wrapped in a similar type of seaweed called nori, I think you know what I am talking about. I have been finding different ways to incorporate it into some asian inspired meals.  For lunch as school last week, I brought some brown rice mixed with rice vinegar, thinly sliced cucumber and carrot, and torn laver on top.  For dinner two nights ago, I made a Quinoa Stir-Fry with carrots, peas, chicken, fresh garlic and ginger, and sesame oil. I scooped it up with my chopsticks and s...

Curry Soup, Oreos, and Custard

I cooked up a storm on Monday night. I tried three new recipes, and they all turned out great. It was a miracle, and something that doesn't happen often. It seems that the more I cook the more disasters I have. Lentil Sloppy Joes, Vegan Lemon Poppy Seed Bread, Black Bean Brownies to name a few. Yet, each one teaches me something new that I didn't know before. I can't complain about the failures, because they are my teacher. But when I am successful I am not ashamed to celebrate my victory :)!  For dinner I made a Thai Red Curry Pumpkin Soup that I found over at The Whole Kitchen blog . I found her blog recently, and I adopted her this month for Adopt A Gluten Free Blogger. I couldn't find just one recipe, because they all looked so delicious. So you will be seeing more recipes from her blog that I will be trying in the next week. I was definitely impressed with this soup. I followed it exactly except I didn't have a bell pepper, I used chicken instead of turkey, a...

Coconuts and Collards oh my

Image
I am excited to share with you some of the great food I ate yesterday. I told you on Monday that I am going sugarless for ten days, and my goal is to try to eat more vegetables and balance out my cravings. It is going well and I believe yesterday was a great success. It included a lot of coconut and collard greens, and that makes me happy :). For breakfast I ate a banana sliced in half with natural peanut butter and unsweetened coconut.     For lunch I ate summer rolls. They originated in Vietnam and the name literally means "mixed salad rolled". You can take whatever filling you want, with options including meat, sprouts, vegetables, rice noodles, and herbs. Then you wrap it up in a thin wrapper made out of rice, and is generally served with a dipping sauce. It is naturally gluten free, fresh tasting, and a meal I enjoy frequently. Yesterday I put avacado, cucumber, mushroom, carrot, and cilantro leaves in my summer rolls. I used a recipe for Spicy Mustard Green and ...

Broccoli Miso Stir-Fry

Most of the time I eat until I am full, more often than I would like I continue to keep eating even after I am full. But the point is I eat to feed myself. End of story. But there are other times, when I eat something I know is good for me and looks attractive, I feel not only fed but nourished. It goes beyond just eating to knowing I am doing something good and powerful for myself. I truly felt nourished after eating this dish. It is loaded with broccoli, carrots, onions, zucchini, and ginger providing a fabulous dose of calcium, vitamins, antioxidants, and beta carotene. Served over brown rice it makes a wonderful vegetarian dinner. I based this off of a recipe I found in Clean Food by Terri Walters. She focuses her cookbook on eating a diet of wholesome natural foods. It is strictly vegetarian and there are also many recipes that are gluten-free, dairy-free, and if not she writes out suggestions for substitutions. I find her recipes inspiring and delicious. The book has four sectio...

How about a soba noodle?

Image
Okay, okay. So this is my third post today. I have two great reasons for this. First, I have so many pictures and recipes that I have been wanting to post about and today seemed like a good day to do it. Second, I need to work out and I am putting it off. But really, this recipe is awesome, and if you like ginger and lemon you are going to love it! My normal routine is to plan out my menu and go grocery shopping on Monday. I usually plan out meals Monday-Friday and assume that there will be leftovers for us to eat over the weekend. That way we spend less on groceries and there is less waste. However, sometimes there are no leftovers and by Sunday I have to scrounge to try to make a meal out of the random ingredients left in my cupboards and fridge. Last Sunday the randomness consisted of leftover ginger root, spinach and shrooms that were about to go bad, and soba noodles. This is going off topic... but have any of you ever tried soba noodles? They are made out of buckwheat. Many peopl...
