Chili

I am planning on posting tonight about what we ate yesterday and today. However, I had a few minutes before leaving for class and I wanted to post my Mom's chili recipe. I always make chili when I do freezer cooking and it is Chris' favorite meal. He could probably eat it for dinner every day for 3 weeks straight before getting tired of it. Since I feature us eating chili quite often on this blog I figured it was high time I posted the recipe :). Chili makes 10 servings  1 lb. ground beef 1 medium onion, diced 1 jalapeño, diced 3 cloves garlic, minced 29 oz tomato sauce 29 oz crushed tomatoes 29 oz kidney beans with liquid* 29 oz pinto beans with liquid* 2 tsp cumin powder 1 1/2 T chili powder 1 1/2 tsp black pepper 2 tsp salt 2 cups water Cook ground beef and set aside. Detox Day 2

Image
I hope you all had a wonderful day and were able to stay warm! We woke up to ice on all our windows, but from the suggestion of a friend we dripped out faucets and thankfuly none of our pipes froze. We are also done with day 2 of our detox :)! I made oatmeal to go with breakfast this morning. I used half water half coconut milk for the liquid, and once the oatmeal was cooked I added in some sea salt, cinnamon and coconut oil. We both really enjoyed it! I also had a cup of soup to drink on the way to work. It was chicken broth blended with some beans, carrots and kale and I added seasoning to taste.  Chris ate his oatmeal with an omelet and an orange.  For lunch we had more of the Asian brown rice salad I made Sunday with some baked veggies. haha We didn't like the veggies today either. Sad. I need to figure out a way to repurpose those veggies into something we like a little better, and find a different veggie side dish for tomorrow's lunch. ...

7-Layer Mexican Dip (Gluten free, dairy free, vegan)

I like sauces. I like dressings. I like condiments. I like dips. Anything that I can scoop into, dip out of, spoon from, or be squeezed out is a friend of mine.  I was looking for a way to use up some black beans I had cooked up last week. Given my love of anything dip related, this recipe practically jumped out at me. It was a recipe for mexican layer dip from my Clean Food Cookbook. The 'sour cream' was made out of tofu and it was completely gluten and dairy free. I thought I would give it a try and put in my own few twists. The recipe called for 16 oz of bean dip. What I had were unseasoned black beans. I would give you the recipe for how I made my bean dip but I am not sure the exact amounts. I know I started with two cups of black beans, 1/2 diced onion, 2 cloves garlic, 1 tsp pepper, 1 chili in adobo sauce. I blended and tasted. It was bland but spicy. Eck. So I added 1 tsp chili powder and 1 tsp. salt. I tasted it again and realized I put in WAY too much salt. (Thi...
