Detox Day 8

Image
We are done with the 8th day of our detox! I had a good day at school and I enjoyed my new classes. As far as I know my first test went well too :). For breakfast we had the potato/kale/onion mixture with an egg and salsa and an orange.                At school I found a nice chair and ottoman in a study room to eat my lunch.  I really enjoyed the brown rice salad and roasted carrots that I made yesterday.    Chris has requested chili every night since we finished our chili last week. So, we pulled another bag out of freezer and ate it for dinner tonight with goat cheese. Instead of eating anything for dessert after dinner we just ate an extra bowl of chili. It was delicious :). I will post the recipe soon! I felt bad after my post yesterday where I complained about all the things on my to-do list and my stress level going into this week. I thought a lot about it this morning on my commute to schoo...

Detox Day 6 and 7

Image
Hey everyone! I only thought I was going to have lots of time this weekend to cook. It ended up being really busy, and I didn't even take any pictures yesterday. Sorry!  I will give you the quick run-down for yesterday's eats. We ate our usual orange, oatmeal and soup for breakfast. We ate leftovers for lunch and went over to a friends house for dinner. They served baked chicken, sweet potato, asparagus and kale. It was absolutely delicious and we had a lovely time! Today, I did a much better job of taking pictures.  We ate grapefruit instead of oranges for breakfast this morning. My Mom ate her grapefruit like this and taught me how to peel them. Now I love eating it this way too! With a small paring knife you cut the rind off of the grapefruit. Then you cut into each segment with the knife and scrape out all the flesh.  There is very little waste with this method as long as you cut as close as you can to the peel.  It was really yummy! ...

Salsa Roja

Image
Well folks, I wrote a post about salsa roja yesterday. Somehow the text got erased simultaneously as I pushed the publish post button. Resulting in, what I imagine, was a very boring read. I sincerely apologize. However, I still want you to know about this amazing red salsa. So I will try again. It is fresh, flavorful, bold, vibrant, and spicy. Writing this makes me want to make another batch tomorrow. As you know, I have a thing for sauces and spice. You really can't go wrong. Especially when lime juice and cilantro are added to the mix. I googled roasted tomato salsa and found the recipe for Salsa Roja off of the One Particular Kitchen blog. I made two different batches. The first I only put one or two jalapenos in to make it mild for a Christmas Eve party. The other I put in jalapenos, serranos, and red pepper flakes to give it some intense heat for my Mom's christmas present. I am my mother's daughter in many ways, including my love for spicy foods. It was kickin...

Tomato and Wild Rice Bisque (Dairy Free, Gluten Free)

I know I have been off the radar for a little while and I do have a good excuse. I was without power last week, and had to get a new power cord for my computer. I have also been without a camera for two weeks. I can be thoughtless and true to form, I left it at my parents house the last time we were there. My Mom graciously offered to send it to me through the mail, because she is cool like that. I told her not to worry, and we will just get it next time we are in town. I will be so glad to get it back when we go on Saturday. Because I haven't been taking pictures of my food I feel like I can't post recipes about it. But, as I don't get my camera until Saturday, and I have a great soup recipe to share with you, you will just have to imagine what the soup looks like. Or, even better yet, make it and find out for yourself. I had some veggies to use up in the crisper, and I wanted something warm. Hmmm... I thought about it and immediately decided to make soup. I love soup. I...

Broccoli Miso Stir-Fry

Image
Most of the time I eat until I am full, more often than I would like I continue to keep eating even after I am full. But the point is I eat to feed myself. End of story. But there are other times, when I eat something I know is good for me and looks attractive, I feel not only fed but nourished. It goes beyond just eating to knowing I am doing something good and powerful for myself. I truly felt nourished after eating this dish. It is loaded with broccoli, carrots, onions, zucchini, and ginger providing a fabulous dose of calcium, vitamins, antioxidants, and beta carotene. Served over brown rice it makes a wonderful vegetarian dinner. I based this off of a recipe I found in Clean Food by Terri Walters. She focuses her cookbook on eating a diet of wholesome natural foods. It is strictly vegetarian and there are also many recipes that are gluten-free, dairy-free, and if not she writes out suggestions for substitutions. I find her recipes inspiring and delicious. The book has four sectio...
