Detox Day 6 and 7

Image
Hey everyone! I only thought I was going to have lots of time this weekend to cook. It ended up being really busy, and I didn't even take any pictures yesterday. Sorry!  I will give you the quick run-down for yesterday's eats. We ate our usual orange, oatmeal and soup for breakfast. We ate leftovers for lunch and went over to a friends house for dinner. They served baked chicken, sweet potato, asparagus and kale. It was absolutely delicious and we had a lovely time! Today, I did a much better job of taking pictures.  We ate grapefruit instead of oranges for breakfast this morning. My Mom ate her grapefruit like this and taught me how to peel them. Now I love eating it this way too! With a small paring knife you cut the rind off of the grapefruit. Then you cut into each segment with the knife and scrape out all the flesh.  There is very little waste with this method as long as you cut as close as you can to the peel.  It was really yummy! ...

Seaweed as a Condiment

Image
Happy Labor Day everyone! I have had a great weekend so far and I am excited to spend some time with hubby today and get caught up on some homework. Lazy days at home at the best! I got some laver seaweed the other week, which is an edible seaweed that has high levels of iodine and iron. It is paper thin, and has a little crunch when you bite into it, but then easily dissolves in your mouth. It has a wonderful savory, sea-salty taste that makes it a great condiment. If you have tried sushi, which is wrapped in a similar type of seaweed called nori, I think you know what I am talking about. I have been finding different ways to incorporate it into some asian inspired meals.  For lunch as school last week, I brought some brown rice mixed with rice vinegar, thinly sliced cucumber and carrot, and torn laver on top.  For dinner two nights ago, I made a Quinoa Stir-Fry with carrots, peas, chicken, fresh garlic and ginger, and sesame oil. I scooped it up with my chopsticks and s...

Tomato and Wild Rice Bisque (Dairy Free, Gluten Free)

I know I have been off the radar for a little while and I do have a good excuse. I was without power last week, and had to get a new power cord for my computer. I have also been without a camera for two weeks. I can be thoughtless and true to form, I left it at my parents house the last time we were there. My Mom graciously offered to send it to me through the mail, because she is cool like that. I told her not to worry, and we will just get it next time we are in town. I will be so glad to get it back when we go on Saturday. Because I haven't been taking pictures of my food I feel like I can't post recipes about it. But, as I don't get my camera until Saturday, and I have a great soup recipe to share with you, you will just have to imagine what the soup looks like. Or, even better yet, make it and find out for yourself. I had some veggies to use up in the crisper, and I wanted something warm. Hmmm... I thought about it and immediately decided to make soup. I love soup. I...

Broccoli Miso Stir-Fry

Most of the time I eat until I am full, more often than I would like I continue to keep eating even after I am full. But the point is I eat to feed myself. End of story. But there are other times, when I eat something I know is good for me and looks attractive, I feel not only fed but nourished. It goes beyond just eating to knowing I am doing something good and powerful for myself. I truly felt nourished after eating this dish. It is loaded with broccoli, carrots, onions, zucchini, and ginger providing a fabulous dose of calcium, vitamins, antioxidants, and beta carotene. Served over brown rice it makes a wonderful vegetarian dinner. I based this off of a recipe I found in Clean Food by Terri Walters. She focuses her cookbook on eating a diet of wholesome natural foods. It is strictly vegetarian and there are also many recipes that are gluten-free, dairy-free, and if not she writes out suggestions for substitutions. I find her recipes inspiring and delicious. The book has four sectio...

What can you do with a carrot?

Image
Carrots are great. Crunchy and sweet, high in beta carotene, as well as a good source of vitamin C, vitamin K, dietary fiber and potassium. I tried 3 recipes and went through 4 pounds of carrots yesterday. My first recipe was a dud. Down went 2 pounds of carrots into the trash can. The second recipe I made was enchilada sauce with carrots. It was super simple and tasted delicious! I will post the recipe with pictures when I make the enchiladas later this week. Finally, I made carrot cake. I got the recipe from a cookbook my Mom gave me called "Uprisings". The recipes are from a variety of whole grain bakeries throughout the United States. It is a cookbook I love and refer to often. Everything I make has turned out great. But I haven't used it in a while because everything has wheat in it. I am trying to live as gluten-free as possible and so I have avoided this book. But one of my summer goals is to do gluten-free baking, so I did some research. I found that gf oats when ...
