Freezer Cooking (Part I)

Hey everyone! I have good news. Last friday my summer semester at school officially ended. I have two weeks of break and I have many things planned to do while I am off. I spent Sunday hanging out with my wonderful friend Jessica in Atlanta. We hiked the trails at Chattahoochee Recreational Park, visited an international market and ate some wonderful Greek and Indian food. Yummy!  Yesterday, I hung out with my Mom and 5 of my younger siblings on the lake. We had a great day of swimming, laying out in the sun, playing card games and eating lots of good food. I have enjoyed getting some time to relax with good company and good food. Now for my upcoming plans.... Freezer Cooking! I am jumping on the freezer cooking bandwagon. Growing up, my Mom would do freezer cooking every year, making over 200 meals at one time. I have learned from the best and I figured it was high time I started doing it myself.  I am not making 200 meals, but I do have plans to try to...

White bean cake. With options.

Blueberry White Bean Coffee Cake I would like to present to you my all time favorite way to eat beans.  White Bean Vanilla Cake . Several months ago I found this recipe on The Spunky Coconut blog, and since my discovery I have made it at least a dozen times. It utilizes white beans, lots of eggs, coconut flour, honey, coconut oil, and the essentials like salt, vanilla, baking soda, etc. This cake is delicious for breakfast, lunch, dinner or anything in-between. From someone who chronically forgets to pack snacks, my solution is to eat a huge breakfast that will tide me over until lunch or whenever I get home from work. Eating just one piece of this cake for breakfast will keep me feeling satisfied for hours. Of course it also tastes great between lunch and dinner, or after dinner for dessert.  Being the recipe rebel that I am, I always do something different each time I make it. Like the cake pictured above. I made the normal recipe but added 2 cups blueberries...

The Tomatoes Have Arrived!

Thanks to the rain and the Georgia summer heat we are getting lots of tomatoes! Today I walked out to the garden and seemingly overnight many tomatoes were ripe and ready to pick.  These tomatoes are from my two roma plants. Many of them are a little less than ripe because they were getting spots on them. They are chilling by our kitchen window and I am sure they will be ready soon! You better believe a HUGE batch of pico de gallo is in the near future :). The darker tomatoes are cherokee purple, the yellow ones are striped and of course the red ones are cherry tomatoes. I picked so many cherry tomatoes today. Many of them had split because of so much rain recently. So, after I brought them inside I sorted through them and placed the smooth ones in the bowl for us to eat fresh.  The split tomatoes were divided up. Half of them went into a pot with garlic, a little bit of chicken broth, olive oil and salt and pepper. I cooked it down for about 30 minutes a...

Garden Update 2012

Hey guys! Hope everyone is enjoying their summer. We certainly are :). I wanted to post some pictures and show you my garden. Things are going really well and I am already harvesting jalapenos, basil, and cucumbers! Here are my cucumbers. I planted two cucumber plants and as of yesterday this is how much they have grown. It is amazing to me. I have harvested 3 cucumbers so far and I see several more on the vine that will be ready to pick soon! Three basil plants on the left, and my stevia plant on the right.  The first cherry tomatoes are starting to turn red. I am SO excited to eat my first tomato of the season :). Shouldn't be too long... My jalapeno plant is still small, at only a foot and a half high, but it has lots of peppers on it to make up for its small stature.  My three cherry tomato plants that currently look like a forest despite my best pruning efforts! Hey everyone! I know it has been a long time since I posted. This semester at school has been really tough. Between working, going to class four days a week, and keeping up with the house, free time to do things like experiment in the kitchen and blog is a rare. Goodness me. I will be glad for May 2nd, the last day of finals for the spring semester. Another thing that has been keeping me from writing is that our camera broke over Christmas break. It was a sad day for sure! Therefore, I currently have no way to take pictures of what I have been making recently. Soon, we will get another one though, and I will be back to taking all kinds of pictures of the food that comes out of the Fuller kitchen :).  Now to the important stuff. I have wonderful news. My twin sister got married! I had the privilege of going down to Mexico with my Dad and Mom to be there for her wedding. She is now married to Pepe Ceballos who is from Mexico. Happenings at the Fuller House

Are you ready for an update post? Because even though I think the details of my life are not interesting, you probably do. At least those of you that I am related to or are good friends. I know am bad at communicating. Talk to anyone that knows me. If I don't see you on a regular basis then I probably don't talk to you very often. I do come by it honestly as I come from a whole family of non-communicators. Needless to say, I going to try and incorporate more about my life in this blog instead of just about the food. How does that sound? So, what's up with me? On Friday I successfully completed my second semester at Gainesville State College. I am proud to say that I maintained my 4.0 GPA and received A's in all my classes. I can't believe I already have two semesters in the books. The time is passing quicker than I could have ever imagined. As stressful as school sometimes can be, I find a lot of enjoyment in all the new things I am learning. I felt like an offici...

New Garden Beds

I sincerely hope you all had a wonderful thanksgiving. I certainly did. My husband and I and three of our friends went to spend Thanksgiving with my family in Douglasville. We had a wonderful day, and finished it off with some black Friday shopping at the Tanger outlets in Commerce by where we live.  Last week my husband built me new garden beds and I am excited to show them off.  Here is a picture of the old ones before I filled them with compost. As you can see there aren't very big. I believe they were 4' by 2'.  The new ones he built are a whopping 8' by 4'! I have so much more room now, and I am excited by being able to plant more vegetables next year. To fill the beds we just moved the existing dirt from the previous beds into the new ones. Then I moved 16 buckets worth of grass clippings and leaves that were in a big pile on the other side of the yard to fill them some more. As more leaves fall we will crush them up with the lawnmower ...
