Detox Day 11, 12, and 13

Happy Sunday everyone! I don't really have an excuse for not posting for the last 3 days, except that I have been busy. You know, same old same old. Everybody's always busy all the time :). No worries. I still have some pictures and I will catch you up on the the highlights of the last 3 days and celebrate that today is the last day. Chris is very excited for coffee and biscuits with strawberry jam tomorrow morning! So, when was my last post? Oh yeah, Wednesday. Let me catch you up! Thursday morning we ate a grapefruit and another omelet with salsa.  For lunch we ate the last of the roasted carrots.  We also ate the last of the chicken, carrot brown rice with peanuts and coconut.  For dinner I made sloppy joes with a carrot added for sweetness instead of honey/brown sugar. I served it with oven roasted potatoes and okra. It was dehydrated okra and it didn't hydrate very well and tasted... well... not good. Kind of like I was eating wood....

Detox Day 9 and 10

Hey everyone! If you are new here, check our my first post where I talked about the guidelines of our detox. We are doing well and enjoying our food. I could have done a much better job with exercising. But, a person can only do so much. I am trying to extend myself some grace when I am tired and not try to push past my limits. You know, life is about balance; which is something I continually need to define and work towards. Now we only have four days left and then I will make Chris all the chocolate chip cookies he wants. While he eats cookies, I will eat some dark chocolate covered pretzel thins (that I bought in a moment of weakness on the clearance rack at the store). They have sat untouched for the last 2 weeks in our cabinet and I can't wait to eat a few. Yesterday for breakfast I made oatmeal , an egg sunny side up and an orange. Detox Day 2

I hope you all had a wonderful day and were able to stay warm! We woke up to ice on all our windows, but from the suggestion of a friend we dripped out faucets and thankfuly none of our pipes froze. We are also done with day 2 of our detox :)! I made oatmeal to go with breakfast this morning. I used half water half coconut milk for the liquid, and once the oatmeal was cooked I added in some sea salt, cinnamon and coconut oil. We both really enjoyed it! I also had a cup of soup to drink on the way to work. It was chicken broth blended with some beans, carrots and kale and I added seasoning to taste.  Chris ate his oatmeal with an omelet and an orange.  For lunch we had more of the Asian brown rice salad I made Sunday with some baked veggies. haha We didn't like the veggies today either. Sad. I need to figure out a way to repurpose those veggies into something we like a little better, and find a different veggie side dish for tomorrow's lunch. ...
